How is your week going? Mine is going good 🙂 I am very excited to share another healthy and easy recipe with you today! It’s fancy but easy salmon dinner!!!
Fish is something that I have not learned to cook perfectly. I almost always (like 99.9999999% of the time) buy frozen fish, and I honestly don’t know when it is really done cooking. Maybe I should invest in one of those fancy digital thermometers that tells you the internal temperature of the food! By the way, I’ve been saying this for couple of years (haha), so it probably won’t happen…
Frozen fish is something that I cook when I want a quick, easy meal that’s not too heavy. I usually have tilapia, cod, and/or salmon in my freezer at all times. I try my best to buy wild caught fish. Did you guys know that there are no official standards for organic seafood in the U.S.? I’m seeing more and more people buying organic produce and meat products, but people often neglect to pay attention to the seafood. I am by no means an expert on organic food, but I try my best to buy wild caught seafood whenever possible.
Hubby and I both love salmon. A couple years ago, we were in love with teriyaki glazed salmon, so I have been fixing it almost every month, but recently we switched gears to this amazing honey mustard glazed salmon. It is so super easy to fix, and the flavor is just out of this world! Seriously, this dish looks fancy but it takes only half an hour to make. I made this dish to celebrate our successful healthy eating that we did last week. I didn’t want to cook something heavy to sabotage our entire week of hard work, but I also wanted us to indulge a little, so this dish was just perfect.
Salmon naturally has a rich flavor that can’t be found in the white fish. To complement and balance this richness, I poured on tangy and spicy mustard mixed with sweet honey. I baked it in the oven for 20 to 25 minutes and my dinner was ready to be served. I served this yummy salmon with simple salad and asparagus, but you can serve this with any vegetables you’d like. It would go great with brown rice and steamed broccoli, sautéed garlic green beans with mashed potatoes, or quinoa with tomato and cucumber salad! The possibilities are endless!
Give this quick yet fancy salmon dinner a try and indulge yourself a little 😉 Happy eating, my friends!
