Ah, the year 2020 is ending. I think we all can agree on how 2020 was a crazy year. But it wasn't all bad. I certainly got to spend more time with my husband. I put more effort into staying connected to my friends and family. And we all cooked more at home! Here is a list of the most popular and fan-favorite top 10 recipes in 2020!

Indian Style Vegetable Curry with no coconut milk

Easy and healthy homemade Indian style curry that uses no dairy and no coconut milk! So how did I make it creamy and rich? The secret lies with cashew.

I personally like this curry thick and chunky but if you want a saucy curry, you can easily adjust the consistency of the curry. This Indian style vegetable curry is my take on vegan-friendly vegetable korma!

Avocado Fried Egg Bagel Breakfast Sandwich

Looking for a hearty and tasty breakfast? How about creamy avocado and savory fried between your favorite bagel? This is a quick, easy, and delicious breakfast sandwich that everyone will love.

You can customize by adding cheese (I added a slice of Swiss cheese) or use your favorite type of bagel (Mine is everything bagel). I have a feeling my avocado fried egg bagel breakfast sandwich will soon be your favorite breakfast item!

    Homemade Korean Veggie Tofu Mandu/dumplings

Mandu has so many different names - we know them as dumplings, gyoza, potstickers, and momos. This is my Korean vegan version of mandu made with tofu, sweet potato noodle/glass noodles, and different vegetables. It's a clean, healthy, and delicious recipe perfect to share with your loved ones.

I know it can be little intimidating to make these at home. But no worries! I explain how to make them step-by-step with pictures! Are you ready to make my homemade Korean veggie tofu mandu?

    Vegan Japchae

Have you ever had Japchae? It is a Korean traditional dish often eat during parties and holidays. It's full of healthy vegetables and the noodles are coated with a sweet and delicious sauce.

This is my mom's authentic (and traditional) Japchae recipe made into a vegan-friendly version! This is a fair warning - my vegan japchae can be very very addicting.

Korean Somen Noodle Salad with Soy Sauce

I don't think people can never have enough noodle salad recipes! Noodle salad can be a perfect light meal during the warm season. The sauce in this recipe is sweet and salty. Do you know what that means? Your kids will love it!

If you can't find somen noodles, no worries! You can easily substitute with soba noodles. Korean somen noodle salad with soy sauce is certainly a very popular meal during summer in my household!

    Vegan Chicken Flavor Bouillon Powder

Are you tired of numerous cartons of vegetable and chicken stock/broth taking up all of your pantry? What if you can make a bouillon powder that can replace all these cartons?

Vegan chicken flavor bouillon powder is a perfect substitution for chicken broth (It tastes surprisingly similar to Orrington Farms – Vegan Chicken Flavored Broth Base). All you have to do is dissolve 1 to 2 teaspoons of this magical powder in 1 cup of water. And you have yourself an instant chicken flavor broth!

    Homemade Vegan Kimchi (Version 2)

If you like my first homemade vegan kimchi recipe, I can guarantee you will love this recipe! It is made with fewer ingredients without compromising the taste.

Step-by-step instructions on how to salt the cabbage properly and many other tips to make a killer vegan kimchi at home!

Homemade Pho Chay (Vegan Pho) Recipe

Imagine slurping on a big bowl of noodles immersed in an umami-packed pho broth that's flavored with warm spices! Just writing about it makes my mouth water.

This is not bland, watered down, disappointing vegan pho you had before. No more disappointment! I'm here to show you vegan pho can be as flavorful and tasty as any meat-based pho!

Vegan Air-Fried Spring Rolls (vegan lumpia)

Learn how to make delicious and healthy vegan spring rolls at home! Instead of frying the spring rolls, I'm using an air fryer to cut down the oil. It's crispy, healthy, and taste appetizer everyone will love.

I'm also sharing how to fold spring rolls, different cooking and reheating methods, and other helpful tips in this post!

    Vegan Yukgaejang with Mushroom

Did you know you can enjoy the Korean spicy beef soup vegan style? I'm substituting beef with three different types of mushroom (oyster, shiitake, and enoki mushrooms).

The meaty texture of mushrooms and spicy and savory broth will make you crave this soup during the cold season! If you are looking for a vegan version of an authentic spicy Korean soup, my vegan yukgaejang is it!

Bonus: The best coffee alternatives that taste like coffee!

I'd like to point out that this blog post is not a recipe post. This is the coffee alternatives that I've tried and enjoyed.

I'm covering both caffeinated and non-caffeinated options. I talk about taste, ingredients, price, method of preparation(s), and information on where you can purchase them. If you are looking to cut down on your daily coffee intake, I believe this post can be very helpful!

Here you have my Top 10 recipes in 2020 plus a bonus post! I really appreciate you visiting me here. I will continue to share delicious recipes with you. Have a happy new year, everyone!
