How to Make One-Pan Boursin Chicken Pasta






- Cook the chicken. Heat the butter and olive oil over medium-high heat. Add the chicken, season with salt, pepper, basil, oregano, and thyme, and cook for 2–3 minutes.
- Add the mushrooms and onion. Add the mushrooms and onion and cook for 2–3 minutes. Stir in the garlic and cook for about 30 seconds.
- Add the broth and pasta. Pour in the chicken broth, scraping up any browned bits. Add the pasta and bring to a boil.
- Cook the pasta. Once boiling, cook uncovered over medium-high heat for about 10 minutes, or until 1–2 minutes shy of your desired texture. Stir occasionally and keep the pasta mostly submerged in the broth. If the broth is absorbed before the pasta is ready, add a splash of broth or water as needed.
- Add the Boursin. Reduce the heat to low. Make sure there is a little liquid remaining in the pan, adding a splash of broth or water if needed. Stir in the Boursin until melted and creamy.
- Finish with spinach. Fold in the spinach until wilted. Loosen the sauce with a splash of heavy cream, broth, or water as needed. Taste, season, and serve.
