  • Yield: 1/2 cup of syrup 1x
  • Category: condiment
  • Method: Stovetop
  • Cuisine: American

Ingredients

Scale
  • 1 to 2 Cassia cinnamon sticks (for bold, classic flavor)
or up to 3 Ceylon cinnamon sticks (for a softer, floral sweetness)

  • ½ cup sugar (white for lighter flavor or brown for a hint of molasses)

  • ½ cup water

Instructions

  1. Add cinnamon sticks, water, and sugar to a small pot and bring to a boil while stirring.

  2. Once it comes to a boil, reduce the heat to low and simmer for about 10 minutes.

  3. Turn off the heat and let it steep for at least a couple of hours or up to overnight for a stronger flavor.

  4. Strain the syrup and store it in the refrigerator for up to 1 month.

Notes

  • The syrup will thicken slightly as it cools.

  • If your syrup crystallizes, add a splash of water and gently reheat until dissolved.

  • For a lighter syrup (ideal for drinks), reduce simmering time.
