Make this cozy homemade cinnamon syrup with minimal effort! Perfect for coffee, pancakes, and cocktails - easy, sweet, and warmly spiced.
1 to 2 Cassia cinnamon sticks (for bold, classic flavor)
or up to 3 Ceylon cinnamon sticks (for a softer, floral sweetness)
½ cup sugar (white for lighter flavor or brown for a hint of molasses)
½ cup water
Add cinnamon sticks, water, and sugar to a small pot and bring to a boil while stirring.
Once it comes to a boil, reduce the heat to low and simmer for about 10 minutes.
Turn off the heat and let it steep for at least a couple of hours or up to overnight for a stronger flavor.
Strain the syrup and store it in the refrigerator for up to 1 month.
The syrup will thicken slightly as it cools.
If your syrup crystallizes, add a splash of water and gently reheat until dissolved.
