Super easy and simple Homemade Vegan Vanilla Granola recipe that's sweet and healthy. Perfect for any yogurt bowls and/or for oatmeal toppings!

Ingredients

1 and 1/3 cup old fashion rolled oats
1/3 cup raw almonds, chopped
1 tablespoon ground flax seed
2 tablespoons coconut sugar
2 tablespoons coconut oil
3 tablespoons maple syrup
1 teaspoon vanilla extract
pinch of salt
Instructions
Preheat oven to 325F.
Mix all dry ingredients in a big bowl.
Mix all wet ingredients in a small bowl.
Mix dry and wet ingredients together.
Line the baking sheet with parchment paper.
Lay the mixture in one layer and bake for 10 minutes.
Stir the mixture and bake for additional 10 minutes.
Let it cool completely and store them in an airtight container.
Notes
When you take the granola out of the oven, it may not look as brown or crunchy but do not over bake your granola. Once the granola is cooled completely, they turned darker and become crunchier.
You can use any raw nuts of your choice.
If you don't have coconut sugar, you can substitute it with regular sugar.
