I'm very excited to share my Homemade Vegan Vanilla Granola recipe here today. So what's so special about this granola recipe? Well, let's get straight to it!
This Homemade Vegan Vanilla Granola is:
- Vegan friendly - It does not use honey like my other recipe. It uses coconut sugar and maple syrup as sweeteners.
- Crunchier - It uses coconut sugar in addition to maple syrup which gave the granola extra crunch.
- Classic - It doesn't have any spices or strong flavoring so it can go with ANYTHING.
My husband is not a granola type of person so I created this recipe strictly for myself. Because of that, the recipe only makes about 2 cups. That's a pretty good amount for me but if you are making this for your family, please feel free to double or triple the batch size.
Besides me talking about the recipe, I've decided to share my experience as a newly converted vegetarian at the end of each post. It shall be called "Real talk (being a vegetarian)". So here it is 🙂
Real Talk (being a vegetarian):
One of the main reasons why I decided to talk about my experience being a vegetarian is that I don't want people to think I have no struggle being a vegetarian. The truth is it is very very difficult for me. Yes, even for a person who is very comfortable in the kitchen because I'm not used to cooking vegan and vegetarian dishes. It really is a daily challenge for me.
With that being said, I'm doing lots of research, reading and trying many different vegan and vegetarian recipes, and educating myself about vegan and vegetarian diet.
I was never a breakfast type of person before I changed my diet. Now, I enjoy breakfast a lot more because one, I get hungrier more often so I kind of need to eat breakfast now. And two, I don't see drastic changes on my breakfast plate so I don't have to feel like I'm missing out. For example, a waffle is a waffle, cereal is a cereal, scrambled egg is a scrambled egg, and a yogurt bowl is a yogurt bowl. I've always enjoyed a nice yogurt bowl with fruits and granola so I don't feel like I'm compromising when I'm enjoying my yogurt bowl with this homemade vegan vanilla granola.
I know I shouldn't look at being vegetarian as a compromise or sacrifice but the truth is it sometimes feels like it is. So here you go, you now know the truth. It sure is a difficult journey but it is a choice I made for my mental and physical health. I am not sharing this information to vent/complain. What I am really hoping is that I can comfort and encourage people who are on a similar journey as myself. Let's stay strong!

Ingredients
- 1 and ⅓ cup old fashion rolled oats
- ⅓ cup raw almonds, chopped
- 1 tablespoon ground flax seed
- 2 tablespoons coconut sugar
- 2 tablespoons coconut oil
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat oven to 325F.
- Mix all dry ingredients in a big bowl.
- Mix all wet ingredients in a small bowl.
- Mix dry and wet ingredients together.
- Line the baking sheet with parchment paper.
- Lay the mixture in one layer and bake for 10 minutes.
- Stir the mixture and bake for additional 10 minutes.
- Let it cool completely and store them in an airtight container.
Notes
- When you take the granola out of the oven, it may not look as brown or crunchy but do not over bake your granola. Once the granola is cooled completely, they turned darker and become crunchier.
- You can use any raw nuts of your choice.
- If you don't have coconut sugar, you can substitute it with regular sugar.
