Vegan chicken sandwich with pepper jelly coleslaw – crispy vegan chicken filet with crunchy coleslaw between bread equals perfect sandwich!



For pepper jelly coleslaw

  • 1 tablespoon pepper jelly
  • 2 tablespoons vegan mayo
  • 1 teaspoon apple cider vinegar
  • 1 cup coleslaw mix
  • Salt to taste

For vegan chicken sandwich


  1. Cook the vegan chicken filets according to the instruction. 
  2. While the chicken is cooking, prepare the pepper jelly coleslaw. In a microwave-safe bowl, add the pepper jelly. Microwave it for 10 seconds. Let it cool. Add the mayo and apple cider vinegar until everything is well mixed. Add the coleslaw mix. Mix until everything is well coated. Season with salt. 
  3. Assemble the sandwich. On a sandwich bread, add the lettuce, cooked vegan chicken filet, tomato, and top with the pepper jelly coleslaw. Enjoy right away.


  • If you’d like to prepare the sandwich ahead of time, prepare the coleslaw and sandwich toppings. You can keep them in the refrigerator for up to 2 days. 
  • Don’t cook the vegan chicken filets until you are ready to eat the sandwich for maximum crispiness. 
  • Don’t assemble the sandwich ahead of time. The sandwich will get soggy.
