Have you been craving a crispy chicken sandwich but couldn't find a vegan alternative? This vegan chicken sandwich with pepper jelly coleslaw is sure to satisfy your craving! The crispy air-fried vegan chicken filet and sweet coleslaw between the bun screams a perfect sandwich!

I always feel weird calling a simple dish like this a recipe. Recipes like these are more like an assembly. But when it comes to a simple recipe, it is all about using the right combination of ingredients. Since the vegan chicken filet is the star of the dish, let's talk more about Vegan chicken filets.
Vegan Chick'n Filet
For me, it was challenging to find a good vegan chicken product that mimics the real thing until I discovered Ultimate Plant-Based Chick'n Filets! They are:
- Crispy - Especially when you cook them in the air fryer. But the package has cooking instructions for both the air fryer and oven.
- Similar consistency and texture of chicken
- The "meat" part is moist
- Tasty - Overall, it is a delicious vegan alternative. My omnivore husband was pleasantly surprised by this product
I love and recommend using Ultimate Plant-Based Chick'n Filets for this recipe. But I understand this product is not sold in every store (I purchased mine at Target). So I wanted to share other products that I used to make a vegan chicken sandwich:

Pepper Jelly Coleslaw
This is a very easy and quick coleslaw recipe that can come together in less than 10 minutes. All you need for the dressing are pepper jelly, vegan mayo, apple cider vinegar, and salt! You can use about 1 cup of coleslaw mix or prepare your own like me. Simply mix everything together and you have yourself a sweet and refreshing pepper jelly coleslaw!



Other sandwich toppings
I'm using lettuce and tomato. There is vegan mayo in the dressing of the coleslaw. So I skipped the mayo but feel free to put mayo on your bun. Other great toppings are:
- Pickle
- Vegan cheese
- Sauce (such as buffalo or BBQ sauce)
Helpful tips
- If you microwave pepper jelly in the microwave for 10 to 15 seconds (no longer than 15 seconds), it will be easy to mix in with the vegan mayo. When you take the jelly out of the microwave, make sure to cool it a little before you add the mayo.
- I prepare the pepper jelly coleslaw while the vegan chicken filets were cooking. So this sandwich is meant to come together in a short time. But you can prepare the slaw ahead of time.
- If you'd like to prepare this ahead of time, I recommend preparing the slaw and sandwich toppings, not the vegan chicken filets. I find the vegan chicken filets to be most crispy when it was first cooked in the air fryer.
- Do not preassemble the sandwich ahead of time. The dressing from the slaw will make the bread and the vegan chicken filet soggy.
