    • Pizza dough: I use my Small-Batch Pizza Dough for Two, but store-bought pizza dough works well too.
    • Pizza sauce: I use my No-Cook Pizza Sauce. For a 12 to 14-inch pizza, I find that about ½ cup of sauce covers the dough comfortably without overpowering the other ingredients. Your favorite store-bought pizza sauce works too.
    • Cheese: I use low-moisture mozzarella because it melts well without adding too much moisture to the pizza. You can also mix in another mild, melty cheese, such as Monterey Jack or fontina. I recommend keeping the cheese fairly mild so the pepperoni and hot honey can shine.
    • Pepperoni: I use deli-style uncured pepperoni. The larger slices cover more of the pizza, so you get pepperoni in almost every bite. Regular or thicker-cut pepperoni works well too.
    • Hot honey: I use Aldi hot honey, which is a budget-friendly alternative to Mike’s Hot Honey. Mike’s has a more balanced sweet-and-spicy flavor, while Aldi’s version has noticeably more heat.
    • Optional toppings: I like adding extra red pepper flakes and another drizzle of hot honey for more heat. For extra savory flavor, grated Parmesan is a great addition.

    How to Make Hot Honey Pepperoni Pizza

    1. Shape the dough: Stretch the pizza dough into a 12 to 14-inch round.
    2. Add the toppings: Spread the pizza sauce over the dough, leaving a small border. Top with mozzarella and pepperoni.
    3. Bake: Bake at 450°F for 10 to 12 minutes, or until the crust is golden and the cheese is melted.
    4. Finish: Drizzle with hot honey, slice, and serve.

    Expert Tips

    • Use semolina flour for shaping: I like to use a little semolina flour when stretching the dough for a slightly crisp, restaurant-style texture. If you don’t have semolina, regular flour works well too.
    • Choose your pepperoni based on the texture you want: I prefer deli-style pepperoni because the larger slices give you a more balanced pepperoni flavor in every bite. If you want the classic cup-and-char effect, use thicker-cut pepperoni with a natural casing. The curled edges create little cups that are perfect for catching pools of hot honey.
    • For large deli-style pepperoni: I slightly overlap the pepperoni slices so they cover the pizza. The center slice tends to curl as it bakes, so I make a couple of small snips around the edge to help it stay flat.
    • Add the hot honey after baking: Drizzle it over the pizza as soon as it comes out of the oven to add sweet heat without burning the honey.

    Instructions

    5. Drizzle with hot honey. Slice and serve warm.

    Notes

    • Pepperoni: Deli-style pepperoni gives you pepperoni in almost every bite. For a cup-and-char effect, use thicker-cut pepperoni with a natural casing.
    • Hot honey: Add as much or as little as you like depending on your preferred level of sweetness and heat.
    • Storage: Store leftover pizza in an airtight container in the refrigerator for up to 3–4 days.
    • Reheating: Reheat in a 375°F oven or toaster oven until warmed through and the crust is crisp. You can add another drizzle of hot honey after reheating.
    • Timing assumes the pizza dough is already prepared. If making my Small-Batch Pizza Dough for Two from scratch, allow about 1 additional hour.
