Ingredients

Scale
  • 2 cups sliced bell pepper and onion
  • 1/2 tablespoon olive oil
  • 1/4 teaspoon salt
  • Pinch of freshly ground black pepper
  • 1.5 lb of pizza dough of your choice (or half of this recipe (using a stand mixer) or this recipe (by hand)), divide in half
  • 6 to 8 provolone cheese slices
  • 2 fully cooked sausage, sliced (Italian chicken sausage, Italian pork sausage, or plant-based sausage)
  • 1 cup shredded mozzarella cheese
  • Dash of red pepper flakes (optional)

Instructions

  1. Preheat the oven to 450°F.
  2. Cook the peppers and onions. Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers and onion and cook for 3 to 4 minutes, just until the onion is translucent and the peppers are still slightly crisp. Remove from the heat, then season with salt and black pepper.
  3. Prepare the pizza dough. Stretch the dough into two small pizzas or one 12-inch pizza, then place it on a pizza pan or baking sheet.
  4. Assemble the pizza. Layer the provolone cheese over the dough. Top with the cooked peppers and onions, sliced cooked sausage, mozzarella cheese, and crushed red pepper flakes, if using.
  5. Bake for 10 to 12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Slice and serve immediately.

Notes

  • Cook the peppers and onions just until the onions turn translucent and the peppers are still slightly crisp. They'll continue cooking in the oven.
  • If using raw Italian pork sausage, cook it completely before adding it to the pizza.
  • A sprinkle of Italian seasoning or sliced banana peppers makes a delicious addition.
  • This recipe is designed as a white pizza without tomato sauce, but you can certainly add pizza sauce if you prefer.
