    Vegan Avocado Bagel with Tomato and Cucumber

    Super simple and easy avocado bagel sandwich with tomato and cucumber! This tasty breakfast is vegan-friendly!

    People are going back to the office and kids are going back to school. This equates to a hectic morning. If you are looking for a super simple, easy, and healthy breakfast that you can whip up in no time, you've come to the right place! Let's get to it! 

    Although I love my avocado fried egg bagel sandwich, I sometimes want something more refreshing yet filling. This is a copycat recipe of a local bagel shop near us, Western City Bagel. They make their own bagel and they are well known for their tasty bagel sandwiches. One of my favorites is the ABCT sandwich (Avocado Bacon Cucumber Tomato) without the bacon on an everything bagel. And my vegan avocado bagel with tomato and cucumber sandwich is just that! 

    Why you will love this avocado bagel

    • It is super easy
    • Healthy breakfast sandwich filled with refreshing veggies
    • It will keep you full until lunch

    Ingredients

    • Bagel of your choice (I highly recommend everything bagel)
    • Avocado
    • Tomato (I use Roma tomato)
    • Cucumber (I use Persian cucumber)
    • Salt and pepper
    • Everything bagel seasoning

    How to make vegan avocado bagel with tomato & cucumber sandwich

    1. Toast your bagel.
    2. While toasting your bagel, prepare your veggies (slice your avocado, tomato, and cucumber).
    3. Assemble your sandwich. Place avocado first and sprinkle with extra everything bagel seasoning. Then add tomato slices with salt and pepper on top. Add your cucumber slices. Top with the other half of the bagel.

    Pro tips

    • Toast your bagel. There is something very satisfying in sinking your teeth into crispy toasted bread. Plus it will help your avocado slide around less when you are eating them.
    • Salt and pepper your tomato. It makes a huge difference when you season your tomato with salt and pepper. You just need to add a pinch of each. 
    • I recommend using Persian cucumber or English cucumber. I find them to be crispier and sweeter than regular cucumbers. 
    • Once you are done assembling your sandwich, give your bagel sandwich a gentle but firm smush before eating. This will help all the veggies to be in place and easier to eat!

    Ingredients

    Scale
    • 2 bagels of your choice (I like everything bagel)
    • 1 small avocado or half of a large avocado, sliced
    • Everything seasoning (optional)
    • 1 Roma tomato, sliced
    • Salt and pepper, to taste
    • 1 small Persian cucumber, sliced

    Instructions

    1. Toast your bagel.
    2. While toasting your bagel, prepare your veggies (slice your avocado, tomato, and cucumber).
    3. Assemble your sandwich. Place avocado first and sprinkle with extra everything bagel seasoning, if using. Then add tomato slices on top. Season with salt and pepper. Add your cucumber slices. Top with the other half of the bagel. 
    4. Give your bagel sandwich a gentle but firm smush before eating. Enjoy.

    Notes

    • You can use any bagel of your choice. I personally like to use everything bagel for this sandwich.
    • You can use any type of tomato. 
    • If you are an omnivore, bacon is a great addition according to my husband and friends.
