I LOVE gyros. I am not a huge fan of lamb so I used to get chicken gyros with extra tzatziki sauce. There is something magical about the Mediterranean flavor that puts a big smile on your face when taking a big bite.
It really made me sad knowing that I can't enjoy chicken gyros anymore... Until I had absolutely amazing vegetarian gyros last month when visiting friends and family in Maryland. I was initially going to order a greek salad. But I saw they had vegetarian gyros on the menu. I was super excited and it did not disappoint! I liked it so much that I had to re-create the dish. And this is how my vegetarian seitan gyros with tzatziki sauce were born.
I am still experimenting with homemade seitan. I don't have a personal recipe for seitan just yet but I'm linking the seitan recipe that I used to make my gyros here. This recipe is 'Vegan Seitan Tenders' by "It doesn't taste like chicken." I love the name of her blog 🙂
I made the seitan the day before, cooled, and sliced them. Then I marinaded them for a couple of hours. While I marinaded the seitan, I prepared the tzatziki sauce and other vegetables for my gyros.
I grated one Persian cucumber and sprinkle about ½ teaspoon of salt. This process extracts water from the cucumber. Then squeeze out all the water from the cucumber and mix in the rest of the ingredients for the tzatziki sauce.

How to remove the strong taste or smell from the onion:
Soak the sliced onions in ice water for 15-20 minutes. This process will make your onion very crispy and remove the strong, pungent taste of raw onion! 🙂

Ingredients
Seitan marinade
- ½ lb of cooked and sliced seitan
- 1 garlic clove, minced
- 2 teaspoons red wine vinegar
- Juice of a small lemon
- 1 tablespoon extra virgin olive oil
- 1 tablespoon sour cream
- ¼ teaspoon dried oregano
- ½ teaspoon salt
- 1 teaspoon maple syrup
- 1 teaspoon Dijon mustard
Tzatziki sauce
- 1 Persian cucumber, grated
- ½ teaspoon salt
- 4 tablespoons Greek yogurt
- 4 tablespoons sour cream
- Juice of a small lemon
- 1 tablespoon extra virgin olive oil
- ½ garlic clove, minced
- ¼ teaspoon salt
- Black pepper to taste
Gyros
- 6 flatbreads
- 2 Persian cucumber, diced
- ½ cup cherry tomato
- ¼ red onion, sliced thinly and soaked in ice water for 15-20 minutes
Instructions
Seitan
- Mix all the ingredients in a medium-size bowl and marinate the seitan for at least 2 hours.
- In a large size non-stick pan, cook the marinated seitan until they are golden brown, 2-3 minutes on each side. Set them aside.
Tzatziki sauce
- Grate the Persian cucumber and sprinkle about ½ teaspoon of salt.
- Let it sit over a colander for 15-20 minutes. This will extract water from the cucumber.
- Squeeze all the water out of cucumber and place them in a bowl.
- Mix the cucumber with the rest of the tzatziki sauce ingredients. Set it aside.
Gyros
- On a flatbread, smear about 1-2 teaspoons of tzatziki sauce.
- Add the cooked seitan and vegetables on top.
- Top it off with more tzatziki sauce and enjoy.
Notes
* For tzatziki sauce, if you don't have Greek yogurt, you can substitute for more sour cream and vice versa. I personally like the sour cream version of it more than the Greek yogurt version.
