How to Make

Expert Tips
- Go easy on the sushi seasoning. This bowl needs less sushi vinegar than traditional sushi rolls since you'll likely add spicy mayo or soy sauce. If you're skipping the spicy mayo, season the rice a little more.
- Don't skimp on the crab. I use 4 to 6 ounces of imitation crab for two bowls because it provides a better balance between rice and toppings. Some recipes use less, but I find 6 ounces of imitation crab much more satisfying.
- Choose Korean or Japanese-style imitation crab if you can. It has a firmer texture and richer flavor than most conventional grocery store brands.
- Serve with roasted seasoned seaweed snacks. Wrap a little rice and toppings in a piece of seaweed before each bite. It adds crunch and umami, making each bite taste even more like a California roll. My husband and I both think it's the best way to enjoy this bowl.
- Make the spicy mayo in a zip-top bag. Add the ingredients directly to a small zip-top bag, seal it, and mix. Snip off one corner to drizzle it over the bowl without dirtying another dish.
