    Small Batch Toaster Oven Cashew Coconut Granola

    Sweet and crunchy cashew coconut granola is a small batch recipe you can whip up in your toaster oven! Quick, easy, simple, and absolutely delicious!

    It's a perfect addition to a yogurt bowl and snacks. Now the weather is getting warmer, we tend to crave a more refreshing way to start our morning. And the fruit yogurt bowl with your favorite granola sprinkled on top can guarantee to hit the spot!

    But the problem with most granola recipes out there is that I can't eat all 5 to 6 cups of granola fast enough! Yes, it smells heavenly and yes, it tastes great but that means you gotta eat granola for the rest of the week. Heck, with this amount, everyone in the family needs to eat granola for breakfast for a week.

    Am I the only person with this issue? I don't think so! So I came up with a small batch toaster oven friendly granola recipe! Well, actually my Homemade Vegan Vanilla Granola is also a small batch recipe. If you are looking for other small-batch granola recipes, you should definitely check it out!

    The birth story of "Small Batch Toaster Oven Cashew Coconut Granola":

    I LOVE my Homemade Vegan Vanilla Granola. I cut up an apple, add a big spoonful of Greek yogurt, and sprinkle a handful of my granola. This right here makes me a happy camper! So why did I came up with another granola recipe, you ask? Well, Covid-19 happened! I used up all the almonds and kept forgetting to get some more every time I go grocery shopping. What I had in the pantry though were some raw cashew and raw coconut flakes. So I decided to make granola with it! The result? Well, it was FANTASTIC!! Hence I'm sharing this amazing recipe with you! It's SWEET, CRUNCHY, EASY to make, and NO NEED TO START YOUR OVEN! You can just whip it in a bowl, dump it on the toaster oven pan, bake, and you are done! Easy peasy!!

    Ingredients

    Scale
    • 1 and ⅓ cup old fashion oats
    • ⅓ cup raw cashew, chopped
    • ⅓ cup raw coconut flakes, chopped roughly 
    • 2 tablespoons coconut sugar
    • 2 tablespoons coconut oil
    • 3 tablespoons maple syrup
    • 1 teaspoon vanilla extract
    • Pinch of salt (⅛ teaspoon)

    Instructions

    1. Preheat oven to 325F.
    2. In a small bowl, mix together coconut oil, maple syrup, and vanilla extract. 
    3. In a large bowl, mix the rest of the ingredients. Pour the wet ingredients over and mix until everything is well coated. Spread the mixture onto a toaster oven baking sheet lined with parchment paper (or aluminum foil. I tried both and works on both).
    4. Bake for 10-12 minutes. Take the granola out and stir the granola around a bit.
    5. Bake for additional 10 minutes. 
    6. Let the granola cool and store them in an airtight container. 

    Notes

    • This recipe makes about 2 cups of granola. If this is not enough for you, you can scale it up. If you do so, bake the granola at 350F for 10 minutes and stir the granola and bake for additional 10 minutes.
