3 Ingredients Vegan Kimchi Ramen Fried Rice – Made with ONLY 3 INGREDIENTS (vegan kimchi, vegan Korean ramen, and rice) and it only takes 15 minutes to make! Super easy, quick, and delicious kimchi fried rice recipe that you will love forever!

Have you heard of Chef Chris Cho? If you answered no, you need to check him out on either Instagram or TikTok. He is a Korean chef who makes many Korean dishes very accessible by introducing simplified dishes that most people can easily make and enjoy! My 3 Ingredients Vegan Kimchi Ramen Fried Rice is adapted from one of his popular recipe, Quick & Easy Ramen Fried Rice.

What’s in 3 Ingredients Vegan Kimchi Ramen Fried Rice:

  • Rice – I use leftover sushi rice since this is the main rice that we eat. But you can also use jasmine rice or leftover white rice from your Chinese take-out.
  • Vegan kimchi – In order to make this dish vegan, you must use vegan kimchi. I have an amazing homemade vegan kimchi recipe that you will absolutely love. So be sure to check it out!
  • Vegan Korean ramen – To make this dish, I highly recommend you to use Korean ramen. If you have not tried Korean ramen, you must get them ASAP!! They are spicy, savory, and full of umami! Since it is a vegan dish, make sure to use vegan-friendly Korean ramen. My favorite is SOON ramen by Nongshim.

Korean Ramen

When a Korean person refers to ramen, they are not talking about ramen that you get at a Japanese restaurant but they are talking about an instant ramen noodle. Instant ramen was first introduced to Korea in the early 1960s. Korean learned the ramen noodle making technology from Japan when it was gaining popularity (from Ramen and Ramyun in Korea).

Ramen plays such a significant role in Korean food culture. This is often the very first dish that people learn how to make on their own. And it is one of the most popular food in all age groups because it is delicious but inexpensive and convenient. There are so many different types of (Korean instant) ramen noodles. However, most contain beef, chicken, or seafood extract. So if you are vegan or vegetarian, make sure to check its ingredients list. One of my very favorite vegan ramens is SOON ramen by Nongshim.

Tips on making 3 ingredients vegan kimchi ramen fried rice:

  • When cutting your kimchi into bite-size pieces, I highly recommend you use kitchen scissors. If you were to cut kimchi on a wooden cutting board, your cutting board will be permanently orange.
  • Break up your ramen into small pieces – the best way to do this is by placing your ramen into a zip lock bag and smash them with your fist. The point is to make your ramen noodle pieces about the same size as the rice grain.
  • Use the soup base (from the Korean ramen noodle) as your seasoning.

Honestly, ever since I made this vegan kimchi fried rice, I don’t make my kimchi fried rice any other way. It is so simple and easy yet so flavorful. This is definitely too good of a recipe not to share with as many people as possible. You must try this recipe soon and let me know how you like them!

Ingredients

Scale
  • 1 cup cooked rice
  • 2/3 cup fermented vegan kimchi
  • 1/2 vegan Korean ramen (I used Soon ramen from Nongshim)
  • 1 teaspoon ramen soup base
  • 1 tablespoon grapeseed oil (or vegetable oil)

Instructions

  1. Cut the kimchi into bite-size pieces using kitchen scissors. Set them aside. 
  2. Break the ramen in half and place it into a zip lock bag and crush them until they are very small pieces.
  3. Place the crushed ramen noodle in a microwavable bowl and add 1 teaspoon of soup base. Add 1/2 cup of water and microwave for 2 minutes.
  4. Heat 1 tablespoon of oil in a non-stick skillet on high heat.
  5. Add the kimchi and stir fry them for a couple of minutes. 
  6. Add the rice and microwaved ramen on top. 
  7. Mix and continue to stir fry them together until everything is well incorporated. 
  8. Serve right away.

Notes

  • This recipe was adapted by Quick and Easy Ramen Fried Rice by Chef Chris Cho.
  • If you are not a vegan, use regular kimchi and any type of Korean instant ramen noodles. You can also serve this with a fried egg on top. 
  • You can garnish this dish with sesame seeds, sesame oil, seaweed paper, and/or sliced green onion.
